Iced Coffee Nutrimeal Slushy for a 92F Day

It's been HOT so very hot and today I just didn't feel like eating a proper meal. All I wanted to do was cool down. Being a wellness counselor of course I should heed my own advice as I knew that just gorging on an ice creamy dessert as delicious as it might be in the moment was going to spell a disaster for me later. About an hour later. My blood sugar would spike and then I'd crash and burn. My solution came to me in a flash based on what I had in the kitchen. I have been freezing our home's left over coffee in ice cube trays which makes the flavor more concentrated. I also learned from Dr. Susan Kleiner that coffee or more precisely caffeine can enhance performance because it's ability to reduce the perception of exertion.  So if coffee is your thing but you'd like to find a way to consume less in a healthier way while saving some cash this is for you. - Ekayani

Iced Cappuccino Slushy 

I used USANA's French Vanilla Nutrimeal; I get all my nutrients with that dessert feeling. Pure genius.
I used coffee ice cubes so it wouldn't get too watery
10 Oz of water
3 scoops of  Usana's French Vanilla Nutrimeal
 a dash of almond extract
1/2 tsp of coconut extract
- a dash of cinnamon (optional)
Blended it for 60 seconds and voila! Satisfied and cool!

Recipes with Usana Fruit and Veggie Shake

Diana Yin is the person responsible for testing recipes with USANA Health Sciences test kitchen. I decided to give her take on Green Monster fruit and veggie shake using French Vanilla Nutrimeal a go. Although the idea of adding strawberries and a banana seemed strange,  I was moved by Diana's story about her vegan days in San Francisco. She did a lot of juicing!  Over time she found it difficult to maintain so she was happy to try a new twist on something old that added protein. Diana hasn't steered me wrong so far so I went for it. Verdict? Delicious!

Do's and Dont's
The recipe is easy enough yet I realized that for a smoother blend, taking the time to remove the stems from the spinach I used would have been worth it. Luckily, it was only me drinking this "test runso I was the only one who got greens caught in her teeth! Be sure to pulse the banana, strawberries or grapes with water in the blender first as this will prevent the shake from becoming too frothy. You don't need more than 60 seconds to whip this up!






Ingredients
10 to 12 oz of cold water
1 scoop of  USANA French Vanilla Nutrimeal
A handful of stemmed and finely chopped spinach
A handful of stemmed and finely chopped kale
1/2 cup of fresh or frozen strawberries
1 fresh banana
Pulse the banana,strawberries,greens and water in blender till smooth.
Strain through a sieve
Put juice mixture back into blender and discard the pulpy matter.
 Add 1 scoop of French Vanilla Nutrimeal.
Blend for 45 to 60 seconds.
Serve!
Bottoms Up! You will want to use a sieve to remove the green pieces.



I thought this recipe was great! It was truly satisfying and easy to make and made two servings.
Tip: If you want you can add a scoop of Fibergy for a little extra fiber. French Vanilla Nutrimeal is a gluten free non GMO soy based product.

Frozen Strawberry Yogurt with USANA Strawberry Nutrimeal

Easy peasy! 15 minutes later I was eating a satisfying nutritious dessert!
I am an avid biker and even though my friends probably think I am a bit mad I ride all over Brooklyn and Manhattan across bridges and the sides streets to get where I want to go. It has been a great way for me to redevelop my core strength, see the sites while doing my part to save my environement. Saturday June 9th I biked to Washington Square Park to take in a cultural festival. The day was warm and due to the never ending construction that happens in New York a bit dusty. By the time I got home at 6:30 I was craving something cool and summery. But what?

Strawberry Blueberry Fro Yo with Usana Nutrimeal  

I remembered I had saved some strawberries in the freezer and had some left over frozen blueberries. Along with that I had some Eastern European style yogurt on hand.  Following Diana Yin's recipe from the Usana Test Kitchen within 17 minutes I had a delicious and satisfying treat that didn't leave me feeling bad after a sugar crash.

How I did it
In a metal bowl I placed 1 cup of plain yogurt and
3 scoops of Strawberry Nutrimeal.
I blended these two ingredients together with a whisk.
Next, I took  2 cups  (total) of the frozen strawberries and frozen blueberries I had on hand and put them in the blender. I added 2 tbs of o.j. and 3 tbs of agave. I pulsed the fruit mixture for about 45 seconds because I like small fruit chunks.
Then I added the mixture to the yogurt mix and blended evenly. I popped the bowl in the freezer for 15 minutes and voila! I was happily chowing down my own homemade cooling treat in moments (relatively speaking) from when I conceived it! After eating a bowl I placed the rest in an airtight container to enjoy later.
If you are looking to take care of your nutrient intake while enjoying your summer I suggest you try this recipe! Just don't tell your friends (or your kids)  it's good for them.

If there’s one confession I can make during National Celiac Awareness Month, it’s that I honestly haven’t taken other people’s gluten sensitivities very seriously.
In fact, I’ve sometimes regarded it as an inconvenience, having once gone to three different grocery stores to hunt for gluten-free hamburger buns for what I originally thought would be a simple cook-out. Gluten intolerance sounds kinda made up, I remember thinking to myself.
After speaking with Dr. Nancy Steely, USANA’s in-house naturopathic physician, I felt a little tinge of shame. I realized that my dismissive attitude about Celiac Disease and gluten intolerances was largely the result of being poorly informed.
According to the doctor, those with Celiac Disease experience an immune reaction to gluten (a protein found in wheat, rye, and barley) that causes damage to their small intestine and poor absorption of nutrients. This is in addition to a wide range of seemingly random symptoms, such as muscle cramping, diarrhea or constipation, fatigue, skin rashes, joint pain and so on that can also occur.
Some research has even shown connections between Celiac Disease and autism, depression, ADHD and other concerns. In Dr. Steely’s case, she suffered neurological symptoms associated with CD that went away a month after she was diagnosed and stopped eating gluten.

A Complex Condition

But why are the symptoms so varied? Dr. Steely explained it’s because Celiac Disease is an auto-immune condition in which your body attacks your own cells, so how it manifests in each person is different. That’s also why it’s often misdiagnosed.
In fact, according to the National Foundation for Celiac Awareness, people usually go 6-10 years before they’re correctly diagnosed and about 95% of celiacs today are undiagnosed or misdiagnosed with other conditions.
It also explains why it seems like suddenly everyone is gluten intolerant — because in the past, doctors didn’t know to test for Celiac Disease and the technology for testing wasn’t as advanced.
While it may seem like gluten-free lifestyles are an American fad, you might be surprised to hear that European countries have been addressing gluten intolerance for decades.
For example, in Italy, a country famous for its gluten-laden pastas, children are screened for Celiac Disease by age 6 and Italians of any age are tested for the disease as soon as they show symptoms. WebMD quotes a CD sufferer as saying: “It may be a fad diet, but it’s not a fad disease.”
That said, a patient diagnosed with Celiac Disease is different from someone who simply has gluten sensitivities, where negative reactions to gluten exist without visible damage to the small intestines. The numbers suggest that about 3 million Americans have CD while another 40 million Americans have gluten sensitivities.
“Many people find it difficult to digest gluten, and they simply feel better by eating a gluten-free diet,” explains Dr. Steely.
However, because of the lack of understanding about gluten intolerance, celiacs and people with gluten sensitivities will simply tell people they are allergic to gluten, since allergies are an easier concept to understand. But Celiac Disease isn’t by definition an allergy. It’s a chronic illness.
When asked if there was one thing she wanted readers to take away from this blog post, Dr. Steely said: “If you have a chronic health condition that doctors cannot seem to diagnose, get tested for Celiac Disease. It’s better to rule it out than suffer longer than you need to.”

Gluten-Free Recipes

Below the doctor shares her favorite Frozen Tropical Chocolate Smoothie, while I’ve prepared a USANA Gluten-Free Chocolate Cake made with pureed garbanzo beans (everyone here loved it!). It was inspired by USANA’s in-house nutritionist and senior scientist, John Bosse, who is a big fan of bean cakes and brownies because of the extra protein they provide.

Frozen Tropical Chocolate Smoothie

Ingredients
  • 2 scoops Chocolate Whey Nutrimeal
  • 1 banana
  • 1 cup coconut milk
  • 1/2 cup water
  • 1 cup ice
Preparation
Blend all ingredients at high speed until creamy.

USANA Gluten-Free Chocolate Cake

Ingredients
  • 1-1/2 cups semisweet chocolate or carob chips
  • 2 cups cooked garbanzo beans (rinse and drain, if using canned)
  • 4 eggs or equivalent egg white substitute
  • 2/3 cup ultra-fine cane sugar or low-glycemic equivalent, such as Stevia for Baking
  • 1/2 tsp baking powder
  • 2 Tbs Chocolate Whey Nutrimeal
  • 1/2 Tbs Fibergy Plus
  • 1 cup sliced fresh strawberries or preferred fruit
  • (optional) 1 Tbs confectioners’ sugar for dusting
Preparation
  1. Preheat the oven to 350 degrees F. Grease a 9-inch cake pan.
  2. Melt the chocolate chips in a double boiler or in the microwave on medium, stirring frequently.
  3. Combine the beans and eggs in a blender or food processor; process until smooth.
  4. In a large bowl, combine bean mash, sugar, baking powder, Nutrimeal and Fibergy Plus; whisk until thoroughly combined.
  5. Stir in the melted chocolate and blend until smooth, scraping down the corners to make sure chocolate is completely mixed. Transfer the batter to the prepared cake pan.
  6. Bake for 35 minutes in the preheated oven or until toothpick inserted into the center of the cake comes out clean.
  7. Cool for 10 minutes before inverting onto a serving plate; cover with desired fruit and dust with confectioners’ sugar, if desired, just before serving.
